Hand-picked and hand-selected grapes. Destemming followed by temperature-controlled wild-yeast fermentation for around 18 days, with regular pump-overs to prevent the grape skins from drying. Subsequent gentle pressing followed by maturation, including malolactic fermentation, for 12 months in French oak barrels.
Intense, vibrant red colour. Fresh red fruit, spice, and cherry on the nose. Dense and elegant on the palate, with a fruity, characterful finish.
Sourced from the Fiesole, Perderuccio and Perdernuovo vineyards, which are situated at elevations of 350 to 450 metres above sea level. All three sites have an easterly aspect and galestro soils.
