Manual harvest, with the grapes stored in special drying chambers for one month. During this period, close monitoring is necessary to ensure the right temperature and humidity level. Cold maceration ('cold soak') for four days to extract aromas and flavours, followed by subsequent fermentation. Maturation for 12 months in French oak barrels, then a further 12 months' ageing in bottle before release.
Deep ruby. Wonderful, complex tertiary notes on the nose. Plum, red berries, black pepper, and herbs on the palate. Balanced structure, with ripe berries and fine succulence lending beautiful balance and length.
Sourced from the Le Macie, Le Giordane and I Crachi single-vineyard sites situated 100 to 350 metres above sea level, where the soils are mainly composed of limestone and clay marl.
