Selective manual harvest of immaculate grapes. Back at the winery, the fruit is placed in shallow wooden trays and left to dry out for 3 months in special drying chambers. During this storage period, close monitoring is necessary to ensure the right temperature and humidity level. Afterwards, the vinification process begins with a cold maceration ('cold soak') for 25 to extract aromas and flavours. The wine spends 36 months in large French oak barrels in order to mature and undergo malolactic fermentation. It is then aged in bottle for a further 12 months before being released for sale.
Intense nose of plum, cherry, orange zest, dried flowers, festive spice, and cedar. On the palate, this is a powerful Amarone of richness and depth with juicy acidity. The tannins are rounded and balanced, with a long finish showing lavender, spice and dollops of succulent berry fruit.
Sourced from plots situated 100 to 400 metres above sea level, where a combination of limestone, loam, and clay marl results in consistently high-quality crops.
