Ripe grapes picked selectively and gently into small baskets. Gentle destemming and crushing followed by temperature-controlled wild-yeast fermentation on the skins for eight days. Vinification and maturation for 18 to 20 months in oak barrels and large oak casks.
Balanced and elegant on the nose, with ripe fruit and spice interspersed with delicate toasted notes. Perfect symbiosis on the palate between the wine's imposing structure – underpinned by concentrated, rounded tannins – and its exquisite fruit-accented elegance.
Rimini's hilly hinterlands are mainly comprised of calcareous clay soils. The fruit fro this wine was sourced from a named vineyard where the vines' average age is 10 years.
