Manual harvest into small crates, with initial sorting taking place in the vineyard. The grapes are sorted a second time as soon as they reach the winery. Following fermentation in concrete, this Chianti is left to mature for 12 months in 500-litre tonneaux and 4,500-litre vessels made of Slavonian oak. After bottling, the wine is kept back for a further 24 to 30 months before release.
This Chianti Riserva has a powerful nose with pronounced aromas of dark berry fruit, alongside violet, Mediterranean herbs, coffee, liquorice, pepper and cedar. A full-bodied Sangiovese on the palate, with lovely depth, a dense but soft tannin structure, and pleasant acidity. Thanks to extended bottle ageing, this wine is already at the beginning of its drinking window.
The vines benefit from a southerly and south-westerly aspect, with roots that dig deep into the stony terrain. Galestro slate, the characteristic subsoil of the Chianti region, absorbs warmth and helps the grapes to reach optimum ripeness, while a calcareous clay topsoil absorbs moisture.
