Selective manual harvest of overripe grapes. Gentle pressing followed by fermentation in temperature-controlled stainless steel. Long maturation on the fine lees to lend extra suppleness, texture and complexity.
A hint of volatile acidity on the nose to begin with, underscoring rich, succulent notes of apricot, mango, honey, ginger and spice. Delightfully nuanced, elegant and slightly sweet on the palate. A good acidic structure is in evidence right through to the finish, lending backbone and energy.
The weathered Devonian slate terroir of this steeply sloping vineyard offers ideal conditions for growing grapes thanks to its south-south-westerly aspect and gradients of up to 70 degrees.
