Hand-picked and hand-selected grapes. Gentle pressing followed by wild-yeast fermentation in stainless steel. Maturation for eleven months on the fine lees to lend added complexity and creaminess. No filtering or fining.
A veritable powerhouse – dense, concentrated, long and silky. This majestic wine articulates itself mainly through texture, structure and mouthfeel.
From 120-year-old ungrafted vines that grow on steep slopes consisting of the finest red and grey weathered Devonian slate soils.
