Low average yields. Selective manual harvest involving up to three passes through the vineyard. Wild-yeast fermentation in large 2,000-, 3,000- and 4,000-litre oak casks as well as in stainless steel vats. Then gentle pressing. Eleven months on the fine lees for added complexity and creaminess. No filtering or fining.
The jewel in the Saar's steep-vineyard crown is situated in a side valley, boasting gradients of up to 55%. Scharzhofberg Rieslings display a combination of deep, salty minerality and pronounced, refined elegance.
The vines grow on some of the finest mineral-rich, blue weathered Devonian slate soils.
