Pinot Noir is the first variety to be picked on the estate every autumn. Wild-yeast fermentation and 35% whole cluster, in small open-top vessels, lasting 14 days. Maturation for 12 months in 50% first-use and 50% second-use French Burgundian oak barrels. No filtering.
Red berries, violet and forest fruit on the nose. Complex and elegant on the palate. This medium-bodied Pinot Noir has soft tannins and great freshness and balance. Long finish with red berries and slightly peppery, mineral notes.
Perched on a cool, exposed mountain top with meagre and infertile Franciscan shale soils, this 16-hectare estate is dry-farmed according to the principles of sustainable viticulture.
