Selective manual harvest. Six-week fermentation in stainless steel at controlled temperatures of around 12 to 15°C. Five months on the fine lees, then bottling.
Intense and stony on the nose, with lovely fruit expression. Linear with great tension on entry, leading into a compelling marriage of delicate minerality, succulence, substance, power and purity.
The steep, south-west-facing Leiwener Laurentiuslay is situated on the other side of the river from Leiwen and has deep, weathered grey slate soil. This vineyard is home to some very old vines with roots that dig metres deep through the topsoil and into the bedrock below. The vines extract valuable moisture and minerals that will ultimately lend tremendous structure and expression to the finished wine, resulting in full-bodied, extremely aromatic Rieslings.
