The primary focus during the vinification stage is on the preserving and expressing the purity of the fruit picked in the vineyard. Selective manual harvest followed by slow fermentation based on the wild yeasts that occur naturally in the vineyard – a process that can last more than 10 months. Maturation in traditional Mosel Fuder (oak casks).
Intense nose of honey, ripe mango, peach, grapefruit, and stone. Already very juicy and creamy. Slight phenolic hints on the palate, with fine acidity and beautiful minerality. Excellent ageing potential.
Die Parzelle "Falkenlay" liegt zwischen "Fahrlay" und "Rothenpfad". Der Boden ist hier etwas tiefgründiger und vom grauen Schiefer geprägt. Vor den kalten Winden aus dem östlich gelegenen Bergsattel geschützt, erreichen die Trauben hier immer eine besondere Reife. Clemens Busch pflegt den kontrolliert ökologischen und biodynamischen Weinbau.
