Hand-picked and hand-selected grapes. Gentle pressing followed by wild-yeast fermentation in 1,000- and 3,000-litre oak casks. Maturation on the fine lees for 12 months, without any bâtonnage (lees stirring).
Citrus and spicy notes dominate on the nose. Intense, expressive and elegant on the palate, with playful minerality and tension.
