Hand-picked and hand-selected grapes. Destemming followed by temperature-controlled wild-yeast fermentation for around 25 days, with regular pump-overs to prevent the grape skins from drying. Subsequent gentle pressing followed by maturation, including malolactic fermentation, for 42 months in French oak barrels. After bottling, the wine was kept back for a further six months before being released for sale.
Bright red colour. The nose is fascinating, imbued with the innate freshness of the 2018 vintage. Beautiful balance of acidity and tannins on the palate. Harmonious and elegant on the finish.
Sourced from the Fiesole, Perderuccio and Perdernuovo vineyards, which are situated at elevations of 350 to 450 metres above sea level. All three sites have an easterly aspect and galestro soils.
