Hand-picked Pinot Noir grapes are gently pressed before being fermented in stainless steel. The second fermentation takes place in bottle, with subsequent ageing for around 56 months.
Fine aromas on the nose, with ripe apple, quince, red berries and autolysis notes of yeast, toasted bread, and brioche. Balanced and refreshing on the palate, with a notable mousse and fine fruit expression on a persistent finish.
Weathered limestone- and slate-rich primary rock soils lend Eichholz wines their very own character. The property favours natural farming methods, eschewing the use of artificial fertilisers. This enhances soil life and results in wines with good ageing potential.
