Wild-yeast fermentation for 12 months in 50% new oak barrels.
Ruby colour. Classic, fine Pinot nose of red cherry, blackcurrant, plum, and black pepper. Dark fruit on the palate. Full-bodied yet elegant and balanced, with fine tannins and a long finish. Good ageing potential. Sgraflin is Romansh for a mountain-dwelling bird called the wallcreeper.
Fadri Itin has been working at Schloss Salenegg in Maienfeld since 2018. In 2020, he got the chance to buy grapes from his employer and make small quantities of wine on his own. The fruit for this Chardonnay came from calcareous alluvial/slate soils.
