Destemming of selectively harvested grapes followed by a cold maceration ('cold soak') for 10 days at a temperature of between 4 and 12°C. Subsequent wild-yeast fermentation of intact grapes in open-top vessels. Regular punch-downs of the grape skins. Maturation, including malolactic fermentation, in oak barrels (25% first-use) for 28 months.
Medium ruby. Red berry and delicate roasted aromas on the nose, which translate into the same flavours on the palate. This complex Pinot Noir has fine and beautifully integrated tannins.
Calcareous alluvial/slate soils.
