Selective manual harvest followed by maceration (skin contact). Fermentation, including malolactic fermentation, in stainless steel vessels. Addition of dried Amarone grapes a few months later to trigger a second fermentation that will increase the alcohol level and give the wine greater extract. Subsequent maturation in French oak for 12 months.
Ruby colour. Intense aromatic nose of fresh red cherry, wild strawberry, raspberry coulis and dried plum, complemented by balsamic hints and fresh herbs like mint and thyme. This Ripasso is powerful but has a very soft mouthfeel, with velvety tannins and finely integrated acidity. The palate is full-bodied and opulent without veering into opulence. The finish is persistent with an abundance of cherry fruit and a hint of spice.
Sourced from plots situated 100 to 350 metres above sea level, where the soils are mainly comprised of limestone, marl and clay.
