Fermentation at a controlled temperature of 28 to 30°C. Maturation, including malolactic fermentation, for 16 to 18 months in French oak barrels. Then a further month in stainless steel before bottling.
Ruby colour. Blackcurrant, blueberry, cherry and a hint of basil on the nose. Powerful but very elegant on the palate, with fine tannins, balanced acidity and a long, mineral, red fruit finish.
The Guardiola cru is situated on the northern slopes of Mount Etna at an altitude of 850 to 900 metres above level. The vines, planted 50 to 70 years ago, grow on a mixture of sand and volcanic ash.
