Manual harvest. Destemming followed by traditional wild-yeast fermentation in stainless steel as well as concrete. Subsequent gentle pressing and transfer into 25- to 75-hectolitre oak vessels, with maturation (including malolactic fermentation) for a further 18 to 20 months. No fining or filtering.
Fine nose of red cherry and spice. Beautifully fresh and fruit-driven, with great finesse and complexity. This is a charming, persistent, classy wine.
La Migoua is a vineyard located near the village of Le Beausset on the southern side of the Beausset-Vieux hill. Its soils consist of chalk and clay, with layers of shell limestone dating back 200 million years. The soil structure throughout ranges from pebbles to various shades of clay – red, ochre and almost blue in places. The contours of this terroir form a natural amphitheatre at an average altitude of 270 metres above sea level.
