Manual harvest. Full destemming followed by gentle crushing, then wild-yeast fermentation in stainless steel and concrete tanks, with continual punch-downs of the cap. Subsequent maturation at a constant temperature for 18 months in 25- to 80-hectolitre vessels. No fining or filtering.
Dark red colour with a violet hue. Fruity and harmonious on the nose, with dark cherries and berries as well as earthy, spicy aromas. The palate is powerful but imbued with elegance and great finesse. Long finish. Excellent ageing potential.
Sourced from various vineyards, where the soils consist of sand, silt and clay. The resultant wine is well balanced and a perfect reflection of its terroir.
