Manual harvest. Destemming followed by traditional wild-yeast fermentation in stainless steel as well as concrete. Subsequent gentle pressing and transfer into 25- to 75-hectolitre oak vessels, with maturation (including malolactic fermentation) for a further 18 to 20 months. No fining or filtering.
'Cabassaou' is a very fine Mourvèdre-dominant blend with notes of dark fruit, liquorice, and wild, sweet spice. This wine sets the Bandol benchmark.
Die 50-jährigen Reben der Lage Cabassaou sind robust und kräftig. Teils sind sie von südwestlicher Ausrichtung mit optimaler Sonneneinstrahlung, und teilweise gedeihen sie auf höheren Lagen, die sehr windige Bedingungen haben.
