Guillaume Boillot applies the same Vinification Intégrale® approach to his reds as he does at Domaine Henri Boillot. This unique method involves putting whole bunches directly into barrels in which the entire vinification process, from fermentation to élevage, subsequently takes place – a technique that helps to preserve the wine's full spectrum of aromas and flavours. Only new oak barrels are used.
This Pommard premier cru has a ruby colour, with a delicate nose of ripe red berries, black cherry, violet, orange zest and oak-inflected vanilla. It is dense and full-bodied on the palate, with intense flavours of red and dark fruit and finely judged oak.
Made from two separate premier cru vineyards in Pommard. The soil mainly consists of limestone marl. Guillaume and Camille farm these sites organically, albeit without certification for the time being.
