Extremely selective manual harvest followed by gentle vinification in ancient Gallo-Roman vats that are carved into the rocks of the property's cellar. It goes without saying that nothing else is added to the wine, nor is there any filtering or fining. This ensures that the wine retains the full complexity of all its aromas and flavours. Maturation for 15 months in 70% first-use and 30% second-use barrels.
Complexity and depth on the nose, with freshness, balance and varietal typicity marrying purity with natural fruit expression. Notes of smoked bacon, violet, graphite, and roses. Feminine tannins and a certain light-footedness make this a distinctive wine.
