Selective manual harvest involving several runs through the vineyard. Cold maceration ('cold soak') for 24 hours followed by gentle pressing, then natural sedimentation to clarify the juice. Subsequent fermentation in temperature-controlled stainless steel, with six months of maturation on the fine lees in stainless steel before bottling and subsequent release.
Medium lemon. Very complex on the nose, with floral notes, lilac and rosemary. Intense yet delicate aromas. Firm on the palate, with fresh quince, vibrant acidity, lemon and gooseberry. Perfect interplay between ripeness and minerality, fruit and acidity, and concentration and elegance.
Kastanienbusch is situated in a side valley to the west of Birkweiler. Situated 220 to 320 metres above sea level, the vineyard is well sheltered from cold winds that blow in from the Palatinate Forest (Pfälzer Wald). The soils here are rich in iron and vary between granite, slate and melaphyre. The fruit for this wine was sourced from one of the vineyard's 'sweet spots' – a parcel of around two hectares with a 30-to-35-degree incline and a south-south-easterly aspect. In terms of altitude, it is highest Grosse Lage plot in the Pfalz (280 to 320 metres above sea level).
