Selective manual harvest involving several runs through the vineyard. Destemming followed by natural sedimentation to clarify the juice, then wild-yeast fermentation. Subsequent maturation on the fine lees, with regular bâtonnage (lees stirring) to enhance flavours.
Medium lemon. Elegant, subtle nose of citrus, herbs and pome fruit. Beautifully structured on the palate, with tremendous freshness and characteristic minerality. A complex wine of exceptional balance.
Situated on the edge of Forst, Jesuitengarten has a very warm microclimate. Its soil boasts high concentrations of weathered volcanic basalt along with clay, limestone, sandy loam and limestone gravel. With to its extremely high mineral content, it is considered one of the best vineyards in the Pfalz. An old Jesuit monastery in Neustadt an der Weinstrasse used to own the vineyard, hence the name Jesuitengarten.
