Hand-picked and hand-selected grapes. Gentle pressing followed by cultured-yeast fermentation in temperature-controlled stainless steel. Maturation without malolactic fermentation, then bottling.
Pale gold. Intense nose of tropical fruit, lemon, quince, with fine spice. Powerful on the palate with a medium body. Lingering finish with fine fruit and subtle honey notes.
The grapes for this Pinot Gris grow in a sheltered, relatively low-lying site overlooking the former Kloster Sion monastery in Klingnau. The soil on this south-south-west-facing incline consists of shell-limestone sediment and Opalinus clay.
