Gentle pressing of hand-picked grapes followed by natural sedimentation to clarify the juice slightly, then fermentation for one to three months in 350-litre oak vessels. Subsequent maturation on the gross lees (including partial malolactic fermentation) for a further three to four months in these same vessels.
Apricot, fresh hay, delicately roasted hazelnut, vanilla, and camomile on the nose. Incredibly concentrated, powerful and complex on the palate. Ultra-fine yellow fruit and a note of flint on the finish.
Two thirds of the fruit came from the Stellibofel vineyard, while one third was sourced from the Neubruch vineyard. Both locations benefit from long hours of sunshine that help the grapes reach optimum ripeness.
