The grapes are destemmed and then cold-soaked for 24 hours. After pressing, the juice is left to settle for 24 hours before being moved into 500-litre barrels, where wild-yeast fermentation then takes place. The wine rests for a year in the same casks, without bâtonnage (lees stirring). It is lightly fined with bentonite and bottled without filtration.
Fresh and almost Burgundian on the nose, with slightly reductive notes alongside aromas of apple, pear, apricot and preserved lemon, with slightly smoky hints and a dash of flint. The palate is very intricate, complex and juicy. Salty, chalky minerality and fine herbal and citrus notes lend refreshment to a long finish.
This white wine comes from a selection of Godello that was regrafted almost 20 years ago onto centenarian Mencía vines. The plot in Arganza only covers one hectare and is situated on sandy loess at an altitude of 550 metres.
