Separate fermentation of the different varietal components, with the exception of Monastrell and Fogoneu – two grapes that share much the same vegetative cycle. Meticulous selection, with only fully ripe grapes being picked in several passes through the vineyard. Destemming, pressing and fermentation of the fruit in stainless steel in the directly adjacent winery building. Continued contact with the skins for up to 30 days after fermentation. Pressing then maturation for 12 months in oak barrels.
Ruby with garnet reflections. Balsamic aromas with ripe red and black fruit on the nose. Plum, tobacco and earthy notes on the palate. Powerful, but elegant and fresh at the same time. A well-balanced wine showing great terroir expression.
There are clear differences in the soil profile within each plot – ranging from very sandy to very stony.
