The grapes (around 5% white) are 20% destemmed. Wild-yeast fermentation in 1,000-litre vats. Subsequent maturation for 12 months in used tonneaux. Bottled without filtration or fining.
Initially a little reductive, then unfurling to reveal red berries, red cherry, dried herbs and forest floor. Fresh palate with juicy, stimulating acidity, a medium body and a very elegant tannin structure. Extremely long, complex finish with a slightly salty note.
César Márquez's Sufreiral bottling comes from one of the few limestone plots in the Bierzo DO, situated in the village of Toral de los Vados on the southern side of Pico Ferreira. The vines are aged over 100 years in some cases, producing very low yields. The climate is continental with a slight Atlantic influence.
