Manual harvest only, involving meticulous selection of the grapes. Maceration (skin contact) for up to 14 days to achieve the best possible extraction of aromas, flavours and colour. Subsequent fermentation in stainless steel and open-top vessels. The wine spent 8 months in 500-litre French oak casks an Foudres up to 5000 litre in order to mature and undergo malolactic fermentation.
Aromatic nose of red fruit, dried flowers, Mediterranean herbs and delicate spice. Juicy palate with pleasant acidity and silky tannins. Wonderful aromatic richness on a persistent finish.
Sourced from vines that grow 100 to 150 metres above sea level. The local soil is a type of red limestone referred to locally as call vermell. This wine is made exclusively from high-quality fruit.
