Hand-picked and hand-selected grapes. Cold maceration ('cold soak') followed by wild-yeast fermentation. Maturation for 20 months on the lees in 20% first-use French oak barrels (Taransaud and Darnajou), with regular bâtonnage (lees stirring). Malolactic fermentation also occurred during this time. After a short time in stainless steel, the wine was bottled unfiltered.
Aromas of candied fruit, pastry, and nut dominate the nose, complemented by subtle notes of white blossom. Medium-bodied on the palate. Elegant and velvety, with remarkable savoury freshness.
Historic vineyard on Westside Road, which the Rochioli family have farmed for almost 80 years. The site's predominantly sandy loam soils were derived from sedimentary formation in alluvial fans.
