The 2020 Pisoni Estate Chardonnay was in barrel for 18 months (50% New oak). This is a small production chardonnay from three clones at Pisoni Vineyards. It is sourced from very rocky (granite) soils. Yields are low and fermentation is done with 100% native yeast which brings a very slow and complex fermentation. This often takes 4 to 5 months to ferment. Wine then rests in barrel with very little stirring. Bottling is done with no fining or filtration.
A beautiful array of aromas on the nose. Exotic fruit, pome fruit, flowers, fresh honey, ripe melon and roasted notes. Elegant texture with great complexity and minerality, fantastic depth and vibrant acidity.
