The 2021 Pisoni Estate Chardonnay was in barrel for 10 months (35% New oak). This is a small production chardonnay from three clones at Pisoni Vineyards. It is sourced from very rocky (granite) soils. Yields are low and fermentation is done with 100% native yeast which brings a very slow and complex fermentation. This often takes 4 to 5 months to ferment. Wine then rests in barrel with very little stirring. Bottling is done with no fining or filtration.
The 2021 Pisoni Estate Chardonnay has a nose of red apple, peach, lingonberry, cinnamon, honey, caramel and vanilla. Very fresh on the palate, with juicy acidity giving this Chardonnay tremendous vitality. Densely packed flavours of citrus zest, flint and baked baguette. Long, mineral finish.
