Pet nat is short for 'pétillant naturel' (or 'naturally sparkling'). Although pet nats are a relatively new phenomenon on the wine scene, the method used to make them is in fact quite ancient. Unlike the Champagne method in which fermented still wine is bottled with yeast and sugar for a bubble-producing secondary fermentation, pet nats are bottled while the initial (and only) fermentation is still ongoing. This pet-nat sparkler from Weingut Eichholz stopped fermenting in bottle before all the sugars turned to alcohol – hence the pun 'Pet Nit' (Swiss-German for 'pet not').
Wild-yeast fermentation has resulted in a spritzy, multifaceted wine with exciting aromas and flavours. This is an unorthodox but very interesting and refreshing wine on account of its pronounced fermentation notes married with grapey fruit characters.
Weathered limestone- and slate-rich primary rock soils lend Eichholz wines their very own character. The property favours natural farming methods, eschewing the use of artificial fertilisers. This enhances soil life and results in wines with good ageing potential.
