Selective harvest followed by manual triage. Cold maceration ('cold soak') for 24 to 36 hours followed by a two-week fermentation. Subsequent maturation for 20 months in 80% first-use French oak.
Intense, dense nose of black cherry, blackcurrant and blackberry, along with olives, herbal hints and roasted aromas. This Cabernet Sauvignon is full-bodied and very concentrated on the palate. The tannins are silky and already approachable. The finish is long, showing beautiful berry fruit as well as coffee and cocoa notes.
A blend of four prestigious vineyards in the Red Mountain AVA: Upchurch, Klipsun, Ciel du Cheval and Grand Ciel. Predominantly sandy loam and gravel soils.
