Manual pressing in small stainless steel tanks, with six to seven days of maceration (skin contact) following fermentation. Maturation for 24 months in 50% Bordeaux barrels and 50% american Oak, of which 50% is first use. Racking four times a year during this period. No filtering.
This Cabernet Sauvignon has a wonderful, expressive nose of blackcurrant, plum, cherry and oriental spice. The palate is balanced but powerful, with soft, restrained tannins. Blackcurrant and herbal aromas come to the fore on a long finish.
Perched on a cool, exposed mountain top with meagre and infertile Franciscan shale soils, this 16-hectare estate is dry-farmed according to the principles of sustainable viticulture.
