Manual pressing in small stainless steel tanks, with six to seven days of maceration (skin contact) following fermentation. Maturation for 22 months in classic first-use Bordeaux barrels, with racking four times a year during this period. No filtering.
Nose of black fruit, dark chocolate, pencil lead, vanilla, leather and spice. Concentrated, powerful attack, ripe tannins, wonderful structure and an exceptional finish.
Perched on a cool, exposed mountain top with meagre and infertile Franciscan shale soils, this 16-hectare estate is dry-farmed according to the principles of sustainable viticulture.
