Picking by hand takes place in the cold of night. Gentle pressing with 60% destemmed grapes. After fermentation, the wine spends a year in French oak barrels (60% first-use).
Intense, powerful Pinot nose of strawberry compote, lingonberry, raspberry, cranberry, dried flowers, cedar and spice. The palate has richness and power, with fresh, juicy, well-integrated acidity. Fine roasted notes are accompanied by an abundance of fruit and lend intriguing flavour complexity to a persistent finish.
The wines of Pisoni Vineyards have bags of character, deep colours and remarkable textural qualities – the result of highland terrain and low yields. These exceptional, ageworthy wines owe their vibrant, expressive aromas to the unique combination of fog and cooling breezes that characterise the terroir in which they were grown.
