Selective manual harvest of ripe grapes only. Gentle pressing followed by wild-yeast fermentation in stainless steel. Maturation for six to seven months on the fine lees for a pleasant texture and creaminess. No filtering or fining.
Appealing freshness on the nose, with apricot, white peach, elderberry hints and slate minerality. Dry on the palate, with a touch of residual sweetness as well as fresh, well-balanced acidity and pure fruit characters. Persistent on the finish with fine, salty minerality.
Steep slopes with high proportions of ungrafted vines that were planted over 30 years ago on Devonian slate and greywacke.
