Hand-picked and hand-selected grapes. Gentle pressing followed by fermentation mostly in temperature-controlled stainless steel. Wild-yeast fermentation of a small batch of fruit in a large oak cask. Subsequent maturation on the fine lees through the winter until bottling in the spring.
Pale lemon colour. Intense on the nose, with ripe apple, pear, quince, fresh garden herbs and mineral hints. Dry on the palate, with juicy acidity and a medium body. The finish is persistent, with notes of red apple ending in salty minerality.
The fruit for this bottling is mainly sourced from slate and granite soils in the Halenberg vineyard.
