Low average yields and selective manual harvest. Wild-yeast fermentation in stainless steel vats. Then gentle pressing. Ten to eleven months on the fine lees for added complexity and creaminess. No filtering or fining.
Like many other wines from this iconic vineyard, this wine is imbued with smoky, herbal, mineral complexity, with a vibrant and perfectly balanced interplay of fruit, freshness and suppleness.
Steep slopes with a high proportion of ungrafted vines on red slate soils containing elements of rhyolite and quartz porphyry.
