Low average yields. Selective manual harvest involving up to three passes through the vineyard. Wild-yeast fermentation in large 2,000-, 3,000- and 4,000-litre oak casks as well as in stainless steel vats. Then gentle pressing. Eleven months on the fine lees for added complexity and creaminess. No filtering or fining.
Ockfener Geisberg used to be one of the most prestigious crus in the entire Mosel region. Van Volxem bought a 12-hectare plot in the core of the vineyard, with the aim of revitalising the legendary site. Vines were replanted there in spring 2016, with 2023 the first "GG" vintage to be bottled.
