Grapes from old vines – hand-picked in the vineyard with further sorting at the winery. The fruit is cold-soaked on the skins and then pressed without the addition of sulphur. Wild-yeast fermentation takes place in 500-litre tonneaux, where the wine remains for nine months with occasional bâtonnage (lees stirring).
Powerful and complex on the nose, with notes of ripe peach, ripe apple and sweet pear, underscored by caramel, Crêpe Suzette, honey and appealing oak characters. This white wine has a full body and great depth on the palate, with a rich expression of flavours including ripe apple, buttery pastry and nutty hints. The finish is powerful, complex and long.
Galets roulés (round river stones) on loamy sand and gravel, with elements of calcareous loam. Sourced within the Costières de Nîmes AOP from a selection of old-vine plots that produce naturally low yields.
