Meticulous selection of hand-picked grapes. Destemming followed by fermentation on the skins in separate batches for two to three weeks in open-top oak fermenters and vats, then gentle pressing. Subsequent maturation for 18 months in small oak barrels. No filtering.
Medium ruby. Beautiful scent of sweet dark cherry along with berries and a hint of tobacco on the nose. Soft, smooth mouthfeel on an elegant, juicy palate. This terroir-driven wine, showing red cherry, lovely floral notes, stimulating acidity and limestone minerality, has all the attributes it needs for a long and distinguished life.
Sankt Paul is named after the old property (including castle tower) that abuts the vineyard, which used to belong to the monks of Wissembourg. The vines grow on a south-facing slope, where a massive seam of limestone bedrock underlies a thin topsoil consisting of loam and clay.
