After being hand-picked, only a small proportion of the fruit was destemmed. The grapes were then cooled down and cold-soaked until the onset of wild-yeast fermentation. After fermentation was complete, the wine spent 18 months in new and used oak barrels made from French and Pfalz oak, before being bottled unfiltered.
Fine fruit expression along with clove and cinnamon on a subtle and inviting nose, framed perfectly by a lick of oak. Elegant, grippy, juicy and full of finesse on the palate, with fresh red fruit and a slightly smoky and saline note.
From old vines planted in 1963. The vineyard is called 'Forst'. Coloured sandstone dominates the soil.
