Meticulous selection of hand-picked grapes. Destemming followed by fermentation on the skins for three weeks in open-top oak fermenters and vats, then gentle pressing. Subsequent maturation for 18 months in small barrels made from German and French oak. No filtering and or any other treatment.
Deep ruby. Spice and exquisite fruit on the nose, with sour cherry playing the lead role, complemented by notes of flint, rosehip and forest fruit. Extremely concentrated and powerful yet elegant and juicy on the palate, with fine tannins and a reprise of (ripe) cherry. The finish is tremendous – it never seems to end. Great ageing potential.
The vines, which were planted in 1967, are situated on the hill that slopes south towards Wissembourg in Alsace.
