Gravity-flow winemaking to preserve the character of the juice. Grapes are foot-trodden and fermented using whole clusters with indigenous yeast, minimal temperature control, and a long period (35 to 45 days) of maceration (skin contact). Two years of maturation in one cement tank and a further year of ageing in bottle. Only 550 bottles of this wine were made.
The 2020 Lo Stralisco has a drop-dead gorgeous nose of wild strawberry, sour cherry, violet, sage, liquorice and lavender, dovetailing with stony minerality. It is a red wine with juicy acidity and a cool, medium body. There is a wonderful sense of tension on the palate, with finely structured tannins and an abundance of forest fruit and floral notes on a long-lasting finish.
Sourced from a small 0.8-hectare plot with high levels of limestone, gypsum, weathered sandstone, and clay in the soil. This organically farmed vineyard is situated in a relatively cool, sheltered location.
