Manual pressing in small stainless steel tanks, with six to seven days of maceration (skin contact) following fermentation. Maturation for 15 months in 66% used French oak and 33% used american oak barrels, with racking four times a year during this period. No filtering.
Balanced, complex nose with blackcurrant, forest fruit, herbs and fine oak notes. Fresh on the palate with fine, approachable tannins. The 2018 Domaine Eden has a lingering finish showing lots of blue fruit as well as slightly spicy notes.
Perched on a cool, exposed mountain top with meagre and infertile Franciscan shale soils, this 16-hectare estate is dry-farmed according to the principles of sustainable viticulture.
