Selectively picked grapes. Cold maceration ('cold soak') lasting anything from 12 hours to three days, followed by gentle pressing. Subsequent wild-yeast fermentation in old oak casks and partially in temperature-controlled stainless steel. Maturation on the lees for body and complexity, then bottling in May.
Taut on the nose, with a slightly reductive note. The palate is linear and juicy and shows wonderful salinity. A pure, complex Riesling of remarkable depth and without any 'make-up'.
Die Trauben stammen aus den drei grossen Lagen Hipping, Pettenthal und Rothenberg. Am "Roten Hang" herrscht ein massiver, roter Tonschieferboden mit einer sehr dünnen Verwitterungsbodenauflage vor.
